Cooking Tip #26

Substitute for a one large egg for two tablespoons of mayonnaise.

    1. Hi Kelly,

      I know it sounds strange - but I've actually used mayo instead of an egg in cakes mixes, hoecakes, and muffins. You don't get as good a texture this way... but when you're out of eggs and desperate, this can do the trick... in some cases, that is! :-)
